This is not a tale of how noodles came about or which type of noodles go best with which occasion or meal. A Noodle Story is the name of a small hawker stall tucked away in Amoy street food centre. A small hawker stall with a big attitude.

It’s run by two young Singaporean food heroes, Ben and Gwem pictured working in their huge, state of the art kitchen.

In all seriousness, the two guys have worked in state of the art facilities before. Both have experience working in some of Singapore’s best loved restaurants such as Waku Ghin, Restaurant Andre and Iggy’s. They have now turned their back on that world in favour of the more humble surroundings of one of our busiest food centres, Amoy street.

Like many budding start – ups, they decided to go with what they knew best, noodles. But have mixed them with less traditional ingredients, the likes of which we are more used to in ramen bowls. Using their techniques honed in their previous positions the result is a fantastic mix of Singaporean and Japanese flavours. It’s a pretty brave move, as many people shudder when Japanese food is tampered with, even slightly, but these guys have done a great job.

They call themselves Singapore’s  first and only Singapore styled ramen shop and as far as I can tell they are doing a very good trade. You will have to queue but they are pretty efficient and it’s worth the wait.
