This is not a tale of how noodles came about in Singapore or which type of noodles go best with which occasion or meal. A Noodle Story is the name of a small hawker stall tucked away in Amoy street food centre. A small hawker stall with a big attitude. We visit these guys on our private food tours only.
 
It’s run by two young Singapore food heroes, Ben and Gwem. Both have experience working in some of the best restaurants in Singapore. Names like Waku Ghin, Restaurant Andre and Iggy’s. They have now turned their back on that world. They now work in more humble surroundings. The surroundings one of our busiest food centres in Singapore, Amoy street.
 
Like many budding start – ups, they decided to go with what they knew best, noodles. But have mixed them with less traditional ingredients, the likes of which we are more used to in ramen bowls.
It isn’t often you see slow cooked pork in hawker food. They also have a perfectly cooked soft boiled egg and a prawn wrapped in crispy potatoes.
 
Using their techniques honed in their previous positions the results are fantastic. A mix of Singaporean and Japanese flavours. It’s a pretty brave move. Many people on our tours  shudder when Japanese food is mixed with anything. Even if it’s done so well. But these guys have done a great job.
 
They have never failed to win the coveted Michelin Bib Gourmand award. The team have also represented Singapore’s food scene at events all around the world.
 
They call themselves Singapore’s  first and only Singapore styled ramen shop. As far as I can tell they are doing a very good trade. You will have to queue (unless your on our private tours) but they are pretty efficient and it’s worth the wait.
