Zhong Yu Yuan Wei wanton noodles is one of Singapore’s most famous noodle hawker stalls. Based in the Tiong Bahru market it has a constant stream of hungry customers coming to get their noodle fix.
In a good plate of wanton noodles there are various factors at play. The springiness of the noodles, the texture and filling of the wantons and the aroma of the broth.

The best char siew pork

The thing that stands out here is the char siew pork. There is a reason for this. The stall only uses what they call “The char siew which does not see the sky”. The pig’s armpit is the part between the fatty belly and the shoulder.
Every morning the owner Mr Lee goes downstairs to the butcher and buys only the best part of this meat. It is this meat that they use to create the tender slices of expertly marinated char siew. It is this that keeps us coming back for more.
The pork is roasted in small batches in the hawker stall. It is because of this that you will often see a sign saying “Char siew sold out”. Do not panic. They are probably roasting the next batch.
This husband and wife team have been making this dish for over 30 years. Like so many of Singapore’s food heroes they have perfected it and are famous for it. The name of the hawker stall translates as “Faithful to the original flavours”.
