One of the most popular activities that we do on our corporate food tours is prata flipping. All over Singapore the sight of a hawker flipping prata is a regular thing. We eat prata for breakfast, lunch and dinner. Everyone has their favourite prata stall. Most believe that the perfect prata should be crispy. Indeed this is a sign of freshness. Served with a slightly spicy curry sauce. Simple but delicious.
While we are all used to seeing the prata man in action. How many of us have actually given the flipping a go? It looks easy doesn’t it? Time and time again when we have team building afternoons we realise that actually, it’s pretty hard.

The prata flip

Prata dough is a mixture of flour, water and a bit of egg. The dough is left to ferment over night so it has a stretchyness. The prata chef will stretch the dough until it is a thin square. He does this by flipping it. The chef will flip the dough in a circular motion. This stretches and flattens the dough to create the perfect prata shape. Once the chef has got the dough to his liking he will fold it. This creates the layers that allow us to scoop up more of the curry sauce.
One of our team building food tour experiences involves everyone competing to flip the best prata. We have held this competition around 50 times. Hardly anyone is able to do it. It is a lot of fun though and it creates great photo opportunities.
