Singapore Chilli Crab

Chilli crab is one of Singapore’s most popular dishes. In fact it is a national dish here. Alongside chicken rice and laksa. It’s definitely a must eat food when you visit Singapore. Often we get asked by our food tour guests, “Where can we find the best chilli crab?”

Like everything in Singapore related to food, the answers will vary depending who you ask. Having tried most of them I would narrow it down to 3 places.

Rolands: 89 Marine Parade Central, 440089

Rolands is a very unique restaurant. It is tucked away at the top of a car park behind Parkway Parade on Singapore’s East coast. The reason locals flock here is because Roland’s lays claim to inventing chilli crab back in 1956. Their sauce is less sweet than other restaurants. This is how current owner Roland’s mum made it when the dish was born.

Redhouse: 68 Princep Street, 188661

Red house seafood gets a mention for a few reasons. The family that own the restaurant like to keep themselves private. We have hosted a few events with them and so I have met the owner a few times. He is very strict on the quality of his ingredients. He told me that years ago they noticed their crab’s that they imported from Sri Lanka were getting smaller. They went to visit the farm and discovered that the Chinese mainland were buying all the big crabs. They stopped buying from this farm immediately. Then they went on an around the world search for a crab that would do the dish proud. As a result, they now ship crabs daily from Scotland for some of their dishes.

Their attention to detail in all their dishes is obvious and this is why they make out top 3.

No Sign Board Seafood: 414 Geylang Road, 389392

No Sign Board started off in the character filled streets of Aljunied. As the name suggests they never had a signboard in the early days. They have been going for over 40 years and are always consistent in their crab dishes. They are famous for their white pepper crab which is a drier version of the dish. Their chilli crab sauce is spicier than most which is why we always love a visit here.
